Breakfast service is its own world: early alarms, tight timing and plates that have to look as good as they taste. A busy, expanding venue in Wollongong wants a Breakfast Sous Chef who will own those mornings, working hand in hand with its head chef.
You would run breakfast prep and the pass, lead a crew of breakfast cooks and bring the juniors along. Your menu ideas and specials for each season are welcome, and so are smarter kitchen systems. Ordering, stock and waste sit with you, as do hygiene and a calm, even flow through the rush. The position is permanent and full-time. Sponsorship is available for the successful candidate.

Key Responsibilities
- Run the breakfast kitchen every day and lead prep and service to a high standard
- Partner with the Head Chef on food direction and how the kitchen operates
- Lead up to five breakfast chefs and coach the junior cooks among them
- Develop and fine-tune breakfast menus and specials through the seasons
- Keep plates consistent in quality, look and portion size
- Plan each morning's prep so every bit of mise en place is ready
- Handle ordering, stock rotation, stock levels and waste
- Hold cleanliness, hygiene and food safety at a high level
- Keep the line moving when breakfast gets busy
- Find better kitchen processes and systems
- Help the wider kitchen when needed and build a culture that is professional, motivated and respectful
Requirements & Eligibility
- Minimum 2–5 years' work as a Sous Chef or in a senior chef role
- Demonstrated background in brunch or breakfast-focused kitchens
- Strong knowledge of café-style and modern Australian breakfast cuisine
- Has supervised or led a kitchen team before and can mentor, train and motivate junior chefs
- Strong presentation and food preparation skills
- Good knowledge of kitchen hygiene and food safety requirements
- Experience in ordering, stock control and keeping food wastage down
- Strong time-management and organisational abilities
- Confident leader and communicator
- Performs well when service is busy and is comfortable with early morning shifts
- Team-oriented, reliable and professional
- Committed to a long-term career in the Australian hospitality industry
