Some kitchens cook for a full dining room one night and a large wedding the next. A quality dining and events venue in the Canberra region works that way, and it is hiring a qualified Chef who takes pride in fresh produce and careful work.
Working with the Head Chef, you would cook for à la carte service and functions, select and prepare ingredients, help with menus and costing, keep stock rotated and ordered, and cut waste through good portioning. You would also guide junior cooks and suggest better ways to run the kitchen. Visa sponsorship is available for suitable overseas candidates who do not hold Australian work rights.

Key Responsibilities
- Cook for both à la carte tables and functions, following the Head Chef's menus and daily plan
- Contribute to menu ideas, new dishes and costing
- Choose, check and prepare fresh produce to the kitchen standard
- Rotate, store and order stock and keep inventory under control
- Keep an eye on every dish for quality, consistency and how it looks
- Reduce waste with careful portions, prep and storage
- Pick the cooking method that gets the best from each dish
- Hold the kitchen to strict food safety and hygiene rules
- Stay quick and organised through busy dinners and events, helping the kitchen flow
- Mentor junior cooks and give them tasks that match their skills
- Suggest changes that make the kitchen run better
- Work with front-of-house for great guest experiences, and know how to handle local and regional produce
Requirements & Eligibility
- Certificate IV in Commercial Cookery or an equivalent recognised qualification
- At least 3 years of relevant professional kitchen experience
- Strong background in commercial cooking and food prep, gained in quality dining venues
- Fine dining experience is advantageous
- Regional or rural hospitality experience is advantageous
- Good knowledge of kitchen procedures, hygiene and food safety
- Comfortable with seasonal and fresh produce and careful about consistency, presentation and food quality
- Works efficiently in a fast-paced kitchen and manages time and multiple tasks well
- Stays composed and makes good decisions under pressure
- Good teamwork and communication skills
- Can help supervise junior staff and hand tasks to them
- Professional attitude and a commitment to high hospitality standards
- A genuine interest in a long-term culinary career in Australia
- Must satisfy relevant Australian employment and visa requirements
