A hotel kitchen in Cairns is looking for Chef de Partie cooks who can own a section and hold it together on a full night. Service runs across the restaurant, conferences, functions and events, so no two days look the same.

You will plan your mise en place, cook to the kitchen's standards, keep portions tight and help cut waste through good stock rotation. Senior chefs will lean on you, and junior cooks will look to you for support. Strong performers can take on more as their skills show. Candidates requiring sponsorship may be considered based on individual eligibility.

Key Responsibilities

  • Run your assigned section on your own, from daily prep and mise en place to service
  • Cook and present food to the kitchen's quality standards
  • Keep results consistent across restaurant, function, event and conference services, including high-volume service
  • Control portions and use ingredients efficiently
  • Help with stock rotation and reducing food waste
  • Work closely with senior chefs and the rest of the kitchen team
  • Support junior cooks and help keep the kitchen positive
  • Keep food hygiene, safety and cleanliness high and follow workplace health and safety procedures
  • Stay organised and effective through busy lunch, dinner and event services
  • Take on extra responsibility as your capability grows, helping the wider kitchen run smoothly

Requirements & Eligibility

  • Proven experience as a Chef de Partie or equivalent commercial kitchen professional
  • Certificate III in Commercial Cookery or equivalent qualification
  • Able to run and manage a kitchen section independently, with demonstrated practical cooking and prep skills
  • Commercial kitchen experience across varied service settings
  • Understanding of food safety, hygiene and WHS requirements
  • Keeps quality and consistency under pressure
  • Strong communication and teamwork, with a reliable, professional approach
  • Able to work evenings, weekends and public holidays as required
  • Leadership or supervisory experience is advantageous
  • Australian work rights where applicable
  • Able to provide evidence of qualifications and relevant work experience, with a commitment to professional development and a willingness to take on greater responsibility based on proven performance
