Cooking over a wood-fire grill takes timing and feel, and a busy Melbourne bistro wants a Chef de Partie who has both. The kitchen is fully equipped and new specials go up on the board every week.

Your shifts would mix cooking and planning. You would run your section through service, pitch dishes for the specials board, work out how much food and how many hands each service needs, and keep orders flowing. Tasting and checking plates, keeping hygiene tight, storing and freezing food properly and showing newer cooks the right way to do things are all part of it. Sponsorship is available for the right candidate.

Key Responsibilities

  • Cook a broad bistro menu to a high standard
  • Pitch dishes for the weekly specials board and help shape the menu
  • Work out the food and staff hours each service needs, then order and track supplies
  • Check every plate during prep and service for taste, consistency and look
  • Keep in step with front-of-house and the rest of the kitchen so service runs smoothly
  • Show others the right cooking techniques and prep methods
  • Hold strict hygiene and food safety standards that meet the regulations
  • Help train kitchen staff when needed
  • Keep your section clean, tidy and running efficiently
  • Pitch in when service gets busy
  • Look after preserving, freezing and storing food where needed

Requirements & Eligibility

  • Minimum 1 year of relevant Chef or commercial kitchen experience
  • Hands-on cooking and food preparation in a professional kitchen
  • Strong grasp of quality control, presentation and food preparation
  • Knows commercial kitchen hygiene standards and food safety
  • Can work quickly and well in a busy hospitality venue
  • Good communicator and team player who is positive about continuous improvement
  • Reliable and motivated, and happy to take responsibility
  • Brings creativity to weekly specials and food preparation
  • Can work flexible shifts, including public holidays and weekends
