Fresh pasta, seafood and seasonal produce sit at the heart of this Perth kitchen, which has a strong Italian influence. It is looking for a Chef de Partie who can take charge of a section and keep it sharp from mise en place to the last ticket.

The venue is busy and focused on quality, so the pace is quick and the standards are high. You would run your station through breakfast, lunch or dinner as rostered, guide newer cooks, and keep waste low and hygiene tight. Evenings, weekends and public holidays are part of the roster.

Key Responsibilities

  • Run an assigned section from preparation right through service
  • Prepare fresh pasta, seafood and seasonal produce to a high standard
  • Complete mise en place so the section is ready before service
  • Cook dishes consistently in high-volume periods, with care for taste, presentation and portion control
  • Work closely with other chefs and the kitchen team to keep operations smooth when it is busy
  • Guide and support less experienced cooks
  • Keep food safety, hygiene and cleanliness standards
  • Check preparation standards and keep food waste low
  • Follow kitchen procedures, recipes and quality standards
  • Cover breakfast, lunch and dinner services, and work evenings, weekends and public holidays when rostered

Requirements & Eligibility

  • Proven professional experience as a Chef de Partie or in an equivalent kitchen position, with a strong background in high-volume commercial kitchen operations
  • Demonstrated experience with Italian-inspired cuisine and practical skills in fresh pasta and seafood preparation
  • Experience with seasonal and fresh produce
  • Able to manage your own kitchen section with confidence
  • Certificate III or IV in Commercial Cookery or equivalent trade experience
  • Strong teamwork, communication and organisational skills
  • Stays efficient and composed in busy service periods, with a professional approach to food quality, hygiene and workplace standards
  • Available to work nights and weekends
  • Able to provide evidence of relevant qualifications and professional experience
