Several venues, every meal service from breakfast to dinner and a steady run of functions keep this New Zealand hospitality business busy. It is hiring a Chef at Sous Chef or Senior Chef de Partie level who can lead from the pass and keep food quality steady all day.

Expect to cook to commercial standards, make sauces and garnishes, handle special diets, watch stock and coach junior cooks. Rosters include weekends, early starts and late finishes. The employer judges you on the cooking you have actually done, not the titles you have held. Applicants requiring employer-supported visa sponsorship may be considered.

Key Responsibilities

  • Lead the kitchen areas and services you are given
  • Cook every meal service, breakfast to dinner, to a steady commercial standard
  • Set up mise en place and the day's prep
  • Portion and plate dishes so they look right every time
  • Make sauces, gravies, garnishes and other parts of each dish
  • Cater for special diets and food requirements
  • Check ingredients on arrival, watch stock levels and support inventory control
  • Use and adjust commercial ovens, grills and other kitchen equipment
  • Keep the kitchen and its equipment tidy, safe and in working order
  • Coach and train junior cooks while working closely with the other chefs
  • Stick to food safety, hygiene and workplace procedures
  • Pitch in on functions and special events, and suggest seasonal dishes for the menu
  • Hold food quality under pressure and adjust to how each venue runs
  • Work a roster that includes weekends, early starts and late evenings

Requirements & Eligibility

  • Proven background in a commercial kitchen
  • NZ Register Diploma or a minimum of 3 years relevant professional experience
  • A real work history that backs up the kitchen experience you claim, with evidence for your qualifications and past jobs
  • Solid practical cooking and food preparation skills
  • Experience running busy services across breakfast, lunch and dinner
  • Sound grasp of portion control, presentation and food quality
  • Works fast without dropping professional standards
  • Good at communication and teamwork
  • Takes responsibility and leads during service
  • Has supported or trained other kitchen staff
  • Knows food safety, hygiene and commercial kitchen practice
  • Flexible for weekends, early mornings, evenings and rostered shifts
  • Baking or dessert experience is an advantage
