The role covers both sides of the kitchen. On the cold side you will break down seafood, prepare sushi and sashimi and set up mise en place; on the hot side you will cook across grill, fryer, pan and yakitori stations. Portion control, presentation, storage and stock rotation matter, and the pace stays high through busy services. Overseas candidates may be considered for 482 visa sponsorship where eligibility requirements are met.

Key Responsibilities
- Cook authentic Japanese food with consistent quality and presentation
- Prepare sushi and sashimi with professional knife skills
- Prepare seafood and set up cold-section mise en place
- Cook hot dishes on the grill, fryer, pan and yakitori stations
- Choose and handle ingredients to professional standards and finish daily prep before service
- Keep portions exact and plating consistent
- Store food correctly and rotate stock to keep it fresh
- Follow food safety, hygiene and cleaning rules and keep your station service-ready
- Work quickly and accurately through high-volume service, coordinating with the rest of the kitchen
- Move between sections when the kitchen needs it
- Keep discipline and attention to detail high and support the wider team each day
Requirements & Eligibility
- Minimum 3 years cooking Japanese cuisine professionally
- A proven work history in Japanese restaurants, sushi bars, izakaya or similar commercial kitchens
- Practical skill in sushi, sashimi or Japanese hot food, with strong knife work and seafood handling
- Genuine hands-on cooking experience relevant to the role, which you can demonstrate
- Used to fast-paced professional kitchens and able to keep quality steady through busy services
- Good knowledge of food safety, hygiene and kitchen practice
- Reliable, punctual and professional, and able to communicate well within a kitchen team
