Asian fusion cooking takes balance: bold flavours, careful technique and a team that can repeat both all night. A premium hospitality venue in New South Wales is looking for a trade-qualified chef to step in at sous chef level and help lead that kitchen.
You will run the pass during service, share out duties, train junior cooks and work with the senior chefs on new dishes and menus. Stock, ordering, costing, portion control and waste are part of the job too, along with rosters and food safety. Sponsorship is available for the successful candidate. Expect rotating shifts, including weekends and public holidays.

Key Responsibilities
- Keep the kitchen running smoothly through every service, leading the team and its workflow
- Check that every dish leaving the kitchen meets the quality and plating standard
- Work with the senior chefs on menu development and new dish ideas
- Bring deep knowledge of Asian ingredients, flavours and techniques to the menu
- Keep recipes, portions, flavour and presentation consistent
- Train and mentor junior chefs and newer kitchen staff
- Hand out duties to match service needs and help build rosters
- Work closely with front-of-house to keep service efficient
- Watch stock, ordering and ingredient supply
- Help with food costing, portion control and cutting waste
- Keep food safety, hygiene and workplace safety standards and a clean, organised kitchen
- Build an accountable, positive team and help management meet culinary and guest goals
Requirements & Eligibility
- A trade-qualified Chef holding recognised qualifications
- Minimum 2 years' experience working as a Junior Sous Chef or Senior Chef de Partie
- Hands-on background in busy commercial restaurant kitchens
- Real experience, or substantial exposure, with Asian or Asian fusion cuisine, including its ingredients, flavours, preparation and techniques
- Able to turn out high-quality food consistently under service pressure
- Earlier experience supervising or supporting kitchen staff
- A firm grasp of kitchen operations, service coordination, menu planning and portion control
- Know-how in ordering, stock control, costing and waste management
- Good communication and leadership skills
- A professional approach to food safety, hygiene and safety at work
- Available for rotating shifts, weekends and public holidays included, with a reliable, team-first attitude
