Key Responsibilities

  • Take charge of prep and cooking for your section
  • Turn out Italian dishes the professional way with seafood, top-quality meats, handmade pasta and produce in season
  • Plate every dish to the house standard for quality, look and portion size
  • Get your mise en place done quickly and well
  • Join senior chefs in shaping menus, tasting new dishes and changing with the seasons
  • Watch quality from first prep to the final plate
  • Keep your pace and standards when the dining room is full
  • Coach junior chefs and pass on your know-how
  • Hold the kitchen to strict food safety, hygiene and cleaning rules
  • Talk clearly with the brigade on the pass and keep the kitchen calm, respectful and orderly
  • Keep sharpening your technique and food knowledge

Requirements & Eligibility

  • You hold a relevant commercial cookery or hospitality qualification, preferably Certificate III in Commercial Cookery
  • You bring approximately 1–3 years of real commercial kitchen experience
  • You have cooked Italian food hands-on before
  • You can prove your previous jobs and back your qualifications and work history with documents
  • You communicate well in English
  • You know how a professional kitchen operates
  • You can look after an allocated section on your own
  • You are organised and manage your time well
  • You care about the small details
  • You stay steady when the pressure rises
  • You are professional, dependable and a natural team player who communicates well
  • You want to build a long-term career in cooking
  • Fine dining or hatted restaurant experience is highly regarded
  • Skill with fresh pasta and with preparing and cooking seafood is highly regarded
  • Work with premium meats and seasonal produce is highly regarded
