A new premium Italian restaurant in Sydney, NSW is looking for a General Manager to build it from the ground up, not just keep the lights on.
You will shape the front-of-house structure, hire and train the opening team, write the operating procedures and set up the systems that run each day. Once doors open, you will lead large floor and bar teams, manage rosters and labour costs, oversee wine, spirits and cocktails and work with suppliers on purchasing. Compliance with RSA and WHS sits with you as well. Sponsorship is available for the right candidate. The owners want proof of venues you have opened or led, so bring a career history they can check.

Key Responsibilities
- Lead pre-opening planning and get the venue ready to trade
- Set up FOH structures, floor plans and service flow
- Recruit, interview, onboard, train and develop a strong opening team
- Set clear service and performance standards
- Write SOPs and daily operating procedures, including opening and closing systems
- Lead large FOH and bar teams through daily service, staying hands-on while keeping commercial oversight
- Build rosters and keep labour spend and productivity under control
- Run the POS and operating systems, including Deputy
- Oversee premium wine, spirits and cocktail service, watching beverage costs, GP, pricing and margins
- Handle purchasing and negotiate with suppliers for good commercial results
- Track service quality, guest experience and venue performance
- Keep RSA, WHS and restaurant compliance in place
- Find gaps in operations and bring in practical fixes
- Coach managers and staff to build a steady service culture
Requirements & Eligibility
- A strong track record in senior restaurant or hospitality management, including premium or high-volume restaurant operations
- Proven experience opening or establishing a new hospitality venue
- A verifiable history of venues managed, launched or led
- Experience managing large FOH and bar teams
- Strong recruitment, training and leadership experience
- A hands-on understanding of restaurant floor operations
- Strong knowledge of wine, spirits, cocktails and beverage service
- Experience managing beverage GP, costing, pricing and margins
- Practical experience with rosters, labour budgets and staff cost control
- Experience with POS and restaurant management platforms
- Strong purchasing and supplier negotiation experience
- A sound understanding of RSA, WHS and restaurant compliance
- Able to build systems and procedures from scratch, with strong commercial awareness and operational decision-making
- Able to show previous hospitality leadership through a credible career history
