Running a kitchen well is half cooking and half numbers. A well-established venue in Albany, Western Australia wants a Head Chef who is good at both.
You will own the kitchen across every service: the team, the rosters, the food and the costs. That means building recipes and procedures others can follow, buying well, keeping waste and labour in check, and hitting the budget without letting quality slip. You will also hire and coach your cooks, keep HACCP and safety standards tight, and help steer the menu and the venue's food direction. Suitable international candidates may be eligible for visa sponsorship.

Key Responsibilities
- Take full charge of daily kitchen operations and performance across all services
- Lead the team and organise daily staffing and rosters
- Keep food production consistent, with a close watch on portions and presentation
- Design and run efficient kitchen systems, standard recipes and operating procedures
- Handle food purchasing and supplier relationships
- Track inventory, stock movement, rotation and ordering
- Control food costs and cut unnecessary waste
- Manage kitchen labour costs, budgets and financial targets
- Develop and refresh menus and seasonal offerings
- Uphold food quality standards
- Train and mentor kitchen staff, and recruit and onboard new team members
- Manage staff performance and run development reviews
- Make sure food safety, HACCP and workplace health and safety standards are met
Requirements & Eligibility
- Proven experience as a Head Chef or Senior Sous Chef
- Experience running a busy restaurant kitchen
- Strong operational and financial management ability
- Demonstrated experience controlling food costs and managing kitchen labour costs
- Strong team leadership and staff management skills
- Experience building kitchen systems and putting them in place
- Able to manage suppliers and purchasing
- Excellent knowledge of food safety and HACCP principles
- A strong understanding of modern Australian cuisine
- Able to create quality, commercially viable menus
- Excellent problem-solving plus strong organisational and communication skills
- Able to keep standards high under pressure
