Every good kitchen has one person who sets the tone. A casual dining venue in Brisbane wants that person as its Head Chef, someone who leads from the pass and holds the line on quality.

Your week would mix cooking and leading. You guide the crew through prep and service, use a range of cooking methods, check portions and keep plates looking right. Ordering, storage and stock are yours to manage, as is HACCP and food safety. Fresh menu ideas are welcome, and so is a team culture built on accountability. Shifts fall across seven days, evenings, weekends and public holidays included.

Key Responsibilities

  • Direct the whole kitchen's daily activity from start to close
  • Lead the crew through prep and service, supporting them as you go
  • Hold plates to a high standard for taste, look and consistency, with portions and output kept in check
  • Keep a busy casual dining kitchen moving without bottlenecks
  • Cook and oversee dishes that call for many different techniques
  • Coach and train the people in your kitchen
  • Look after prep, stock, storage and orders
  • Meet every food safety, hygiene and HACCP obligation and keep the space tidy and orderly
  • Put forward new dishes and menu ideas and grow an accountable, high-achieving team culture
  • Cover a roster that includes evenings, weekends and public holidays

Requirements & Eligibility

  • Certificate III or Certificate IV in Commercial Cookery, or an equivalent recognised qualification
  • At least 3–5 years of relevant commercial kitchen experience
  • Previous experience as a Head Chef or senior Sous Chef for approximately 1–2 years
  • Has led and organised a professional kitchen crew before
  • Knows modern cooking methods and a wide spread of culinary styles
  • Turns out consistent results when service is busy
  • Leads, communicates and organises well
  • Firm grasp of food safety legislation and HACCP procedures
  • Presents professionally and conducts yourself to a high standard
  • Flexible availability across a seven-day roster
  • Can supply a current CV, professional referees who can be contacted and dependable details backing up your identity, qualifications and work history
