Running a hotel kitchen means juggling a busy bistro, the bar menu and a fast-growing functions calendar, and a Brisbane hotel wants a Head Chef, who also acts as Kitchen Manager, to enjoy exactly that mix. You will lead the brigade, write the menus and make sure dining and events are remembered for the right reasons.
One day might be ordinary service; the next could be a big celebration, a sporting lunch or a charity event. Across all of it, the food has to be high quality and consistent while still meeting commercial targets. Sponsorship is available for the right candidate.

Key Responsibilities
- Lead, mentor and grow the chefs and kitchen attendants, building a positive, professional culture
- Write and cost modern Australian menus for the bistro, bar and events, with consistent presentation
- Plan event catering and coordinate prep, staffing and service timing with the functions team
- Control purchasing and stock levels
- Keep food costs, kitchen labour and waste within agreed budgets
- Uphold rigorous food safety, hygiene, allergen and WHS standards
- Work hands-on during service and keep the kitchen organised and calm under pressure
Requirements & Eligibility
- Experience as a Head Chef or Kitchen Manager, backed by a strong history in hotel dining and high-volume functions or banqueting
- Culinary talent paired with sound financial judgement, able to deliver busy meal services alongside large events, with clear communication, a practical style and a commitment to growing your team
- Certificate III in Commercial Cookery
- Food Safety Supervisor certification
