Farm-to-table fine dining asks a lot of the person running the floor. This Restaurant Manager role in Melbourne, Victoria suits a front-of-house leader with a verifiable record in premium restaurants and a real feel for wine.

You will set the tone for every service: briefing the team before doors open, managing reservations and special requests, and leading from the floor. Behind the scenes you will build rosters around bookings and events, watch labour, stock, wastage and breakage, and keep the venue compliant with licensing and safety rules. Coaching your team will be a big part of the job.

Key Responsibilities

  • Run front-of-house service and keep standards high on every shift
  • Shape a refined, attentive style of guest care and keep in touch with diners as their meal unfolds
  • Look after bookings, table plans, guest preferences, VIP arrangements and special requests
  • Lead from the floor during service and open each shift with a briefing on the day's priorities
  • Coach, train and mentor the front-of-house team
  • Partner with the kitchen so the restaurant works as one
  • Plan the roster each week to match bookings, events, the season and operating needs, and keep an eye on labour costs
  • Control beverage and front-of-house stock and arrange purchasing
  • Track wastage, breakage and stock use to manage costs responsibly
  • Keep operating systems up to date, add to daily reports and find ways to lift consistency and guest satisfaction
  • Make sure food safety, hygiene, workplace health and safety, responsible service, venue procedures and licensing rules are all followed

Requirements & Eligibility

  • Demonstrated experience as a Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior front-of-house leader
  • Strong background in fine dining, premium restaurants or high-standard hospitality
  • International hospitality experience is highly desirable
  • Proven ability to lead and develop front-of-house teams
  • Strong grasp of restaurant operations, labour planning, stock control and cost management
  • Confident wine knowledge and experience presenting or explaining international wine selections, with a minimum WSET qualification required
  • Excellent English communication skills; additional European language skills will be advantageous
  • A composed, professional approach to guest service and team leadership
  • Close attention to detail and commitment to premium hospitality standards
  • Able to provide evidence of your employment history, qualifications and professional experience for verification
