Ready to be second-in-charge of a busy hotel kitchen? A premium hotel in Queenstown, in the middle of a major transformation, needs a Sous Chef to help lead one brigade that cooks for several restaurants and bars.
This is a permanent, full-time job with at least 40 hours every week. Day to day, you would hold every outlet to the same standard, keep a close eye on food costs and stock, and coach the chefs below you. The roster rotates, so expect evenings, weekends and public holidays. Sponsorship on an Accredited Employer Work Visa (AEWV) is available for the right candidate, and the hotel welcomes New Zealand residents and international applicants who meet its requirements.

Key Responsibilities
- Run food production across every kitchen outlet in the hotel and sign off each dish before it goes out.
- Check prep, stock rotation and mise en place on every section so the team is set before the first guest is served.
- Watch the rosters, hand tasks to junior chefs and jump onto any section to cook and plate when it gets busy.
- Keep food costs on target through tight ordering, par levels and rotation, cutting waste and spoilage in storage.
- Recruit, train and develop cooks, building a calm and productive kitchen culture.
- Keep the kitchen clean, safe and hygienic in line with WHS rules, food safety standards and the hotel grooming code, working closely with the F&B Manager, outlet supervisors and front-of-house staff.
Requirements & Eligibility
- A relevant trade qualification is a must, such as a Certificate in Cookery Level 4 or equivalent; otherwise, a minimum of three years working as a Sous Chef or senior chef in a comparable kitchen.
- Hands-on experience overseeing several outlets inside a premium hotel or restaurant, backed by strong technical cooking that holds a high standard in every service.
- A track record of leading, coaching and building kitchen teams while running the day-to-day with confidence.
- Sound knowledge of food costing, stock control and kitchen budget targets.
- A current Food Safety certificate, plus a full working grasp of WHS rules in a commercial kitchen.
- Willing to work a rotating roster with evenings, weekends and public holidays.
