You would work closely with the Head Chef to organise the kitchen, guide the team, protect food standards and keep the menu developing, including seasonal dishes and specials. Busy services are part of the job, so staying calm under pressure counts. Your experience, trade qualifications and leadership will all be weighed, and the venue wants a suitable candidate whose background can be verified.

Key Responsibilities
- Help the Head Chef run day-to-day kitchen operations and take charge when they are away
- Organise prep and service so the kitchen flows
- Lead and supervise the team in busy trading periods, giving everyone clear tasks
- Keep food quality, presentation, flavour and portions consistent
- Help plan menus and seasonal dishes, bringing ideas for specials and improvements
- Watch stock and help with purchasing and supplier orders
- Help control food costs and cut unnecessary waste
- Make sure food is stored, prepared and handled to the required standards
- Keep HACCP, food safety, hygiene and workplace safety procedures in place
- Train, guide and mentor junior kitchen staff
- Check kitchen cleanliness, organisation and equipment use
- Work with management and front-of-house staff
- Help keep the team respectful, accountable and professional
Requirements & Eligibility
- Proven experience as a Sous Chef, Senior Chef, or similar senior kitchen professional
- A formal qualification in Commercial Cookery
- A strong background in commercial or hospitality kitchens
- Experience leading and supervising kitchen teams, including high-volume services handled with confidence
- Strong hands-on knowledge of food preparation and presentation
- Understanding of HACCP, food hygiene and food safety requirements
- Strong organisation and time management
- Good communication and leadership
- Stays calm and organised when service gets intense
- A reliable, proactive and hands-on manner
- Strong commitment to quality and consistency, and willingness to take responsibility and keep improving
- Able to provide evidence of relevant qualifications and professional experience
- Either Australian working rights or eligibility for employer sponsorship
