A Wollongong kitchen, full-time hours and a real step up: this hospitality business wants a Sous Chef who can run the line when the pressure is on and hold the standard when the head chef is away.

Your days mix cooking with leading. You will time and plate dishes for service, guide and train junior cooks, hold HACCP standards and keep an eye on stock, food costs and waste. You will also help bring in new and seasonal menu items. The business wants someone whose experience and qualifications can be checked, so keep proof of your past roles at hand. Key Responsibilities

  • Lead and coordinate the kitchen through each day's service
  • Help senior chefs with menu planning and prep
  • Cook and plate dishes to set quality and presentation standards, making sure they leave the pass on time
  • Supervise, guide and train kitchen staff in procedures, food preparation and safe work
  • Keep strict food safety, hygiene and HACCP standards
  • Track stock levels and plan prep around the kitchen's needs
  • Help with inventory, food costing and cutting waste
  • Check food quality, consistency and presentation before it goes out
  • Run the kitchen when senior chefs are not there
  • Help develop new and seasonal menu items and find ways to improve efficiency and food quality
  • Look after equipment, report repairs, keep work areas clean and compliant, and work with front-of-house for smooth service

Requirements & Eligibility

  • At least 2 years' experience as a Sous Chef, Senior Chef or equivalent
  • Professional culinary experience that can be independently verified
  • A relevant culinary qualification or apprenticeship, or minimum Certificate III in Commercial Cookery or equivalent
  • Strong practical knowledge of commercial food preparation and cooking techniques, plus food safety, hygiene and HACCP requirements
  • A valid NSW Food Safety Certificate and current food handling certification
  • Proven experience leading or supervising kitchen staff
  • Able to keep food quality consistent under high pressure
  • Strong planning, organisation and time management
  • Experience with stock control, food costs and reducing kitchen waste
  • Strong communication and teamwork, with a professional attitude and genuine commitment to culinary standards
  • Able to work full-time in New South Wales
